This time in tacos with cheese and hot salsa!
Chilli con carne
You will need:
- 1 medium sized onion
- 1 garlic clove
- Black pepper
- 1 pepper (red or green for preference)
- 1 or 2 fresh chillies
- 1 tin chopped tomatoes
- 1 tin kidney beans
- Chilli powder
- 1/8 teaspoon ground ginger (or 2 'strips' of very lazy ginger)
- 300-400g frozen minced beef
- 1tsp ground turmeric
- 1tsp dried coriander
- 1/2tsp paprika
- (Optional) Gravy powder
- Cooking oil (preferably olive oil)
- Dice (or if you are feeling very lazy, grate) the onion, pepper, garlic and chillies.
- Fry until soft.
- Optionally season with a small amount of black pepper (and if you cook with salt, add that now - I do not).
- Add the chopped tomatoes and kidney beans (you may have to rinse the beans first).
- Stir, then add the chilli powder, turmeric, coriander, ginger and paprika.
- Stir well and simmer for 5 min.
- Add the mince, still frozen.
- Keep on the heat until the mince is cooked right through (it will turn brown)
- If the chilli is too watery, add a bit of gravy powder and leave to simmer until it thickens up.
